My life can be pretty weird. Just yesterday we went to the doctors office for my foot. Turns out I had stretched a ligament in my foot! And I had to get a boot :(. I also might have to skip the kids triathlon that I’m doing. And a couple of months ago I stepped on an oyster shell. But my life has many good times too. Here’s a collage that I made with some things in my life.
These banana muffins are sooooooo good! My older sister HATES bananas but she LOVES these! They’re that good. Here’s the recipe:
Soak overnight:
½ c Teff flour
½ c arrowroot starch
1 c water
2 t water kefir
Next morning add
1 ¾ mashed bananas
¾ t salt
½ t baking soda
3 T coconut oil
My mom cooked them in coconut oil.Be careful not to get the pan to hot. Start at 5, move down to 2. Sticks a little, more as you go on. Awesome!!
